We signed up for a winter share at Maplewood Organics and got our first share almost 2 weeks ago – I know I’m posting this late, but I’ve got so many pix to post that I’m really behind!
For our first share, we received: a huge butternut squash, a bag of potatoes, a huge stem of brussells sprouts, a bunch each of kale, chard, baby bok choy, and scallions, two leeks, a bag of lettuce, a celery root, tons of parsnips, two each of red and yellow onions, a head of garlic, and a bunch of arugula.
Here are some of the things we made with our yummy produce:
First, a to-die-for arugula and herb salad:
Baby bok choi sauteeing up as part of a stir fry:
Bok choy stir fry with shrimp, coconut milk, and peanut butter – a dish I first had on a trip back to my birthplace, Seattle, in 9th grade:
A root vegetable soup from one of my favorite cookbooks – tutorial to come –
Kale & chard getting ready to sautee:
Kale & chard in the pan – we did our usual saute with double garlic – fresh garlic & garlic salt:
Brussells taking a bath before going into a braise:
Chicken braised with brussells, garlic, onions, and bacon – not so pretty but very tasty:
