This creamy slice of heaven came about when the cute little bags of key limes were on sale at the store. I fondly remember these fruit and yogurt tarts that we used to make each year and bring to the Mozart Festival for our dinner picnic. With that in mind, I made a lovely little filling with TONS of lime juice, lime zest, yogurt, honey, a splash of cream, and a little bloomed gelatin. I paired that with a sweet little graham cracker crust (my favorite part – shh!) and let it chill out in the fridge for a few hours.
The result? Creamy, sweet & tart bites of de-liciousness! Sinful enough to satisfy my sweet tooth, but light enough to be guilt-free. So refreshing. =)
