Flashback: Lamb & Rice Patties

Problem: Need food. Have boring leftovers.

Solution: Make fancy-looking food out of leftovers.

These are kind-of along the lines of risotto cakes, but made with wild rice pilaf and little bits of slow-cooked lamb shank. My man suggested making them into little cakes and having them with a yogurt dipping sauce. These far exceeded the leftovers expectation! I mixed the leftovers with breadcrumbs, eggs, and a little extra seasoning, then pan-fried them. They were crispy and a little crunchy on the outside, and smooth through the middle, studded with the tender lamb. I seasoned the yogurt with cumin, cilantro, and salt. Mmmm…
