This meal was a great example of one of my “let’s walk around for 5 minutes and see what I can cobble together” meals. I soaked some split peas overnight with no particular plan, then added them to a pot of sauteed aromatics. I seasoned it up like a mildly-spicy curry, then stirred in a handful of chopped kale. Served it over steamed garlic rice for a low-budget (mostly) pantry dinner.
