As I mentioned in an earlier post, grilling season is my favorite culinary time of year. Recently, I made a yummy batch of marinated and grilled chicken thighs – Here’s what I did:
I made the marinade our of lemon juice, olive oil, fresh chopped parsley and cilantro, TONS of fresh chopped green garlic, microplaned lemon zest, and dried coriander and cumin. Oh, and salt and pepper, too.
Then I grabbed the chicken thighs from the fridge. Using a small cast iron skillet, I pounded them out just a little bit to thin them and increase surface area. Here’s the before…
And now the after.. Then I threw the chicken thighs into the marinade, turning each one over at least once to make sure all sides got coated. Then I popped it in the fridge for about 2 hours. I threw them on the grill and let them get charred and happy. I turned them 3 times during the cooking process, and liberally doused them with leftover marinade each time. Didn’t waste a drop!They were oh-so-yummy. My husband said we should have it every week. I’ve got to get going on that… =)
