Halloween Eats

Yes, I know I am a bit late to comment on this, but I am SO behind on my posting! I have got to do multiple posts per day to catch up here… Will I ever make it back to present tense?!

That picture on top is my husband’s jack-o-lantern this year. We were so excited to decorate and get ready for Halloween because it was our first holiday in our new house! We had an awesome time carving pumpkins….

After we carved, we rinsed the seeds and roasted them in the oven with cumin and salt:

On Halloween night, I got the urge to make seafood (no idea why) and made these briney mussells with garlic, white wine and parsley.

I made a cajun-spiced flounder po’boy for my husband (see my last one here):

And a salmon version for myself (btw, I could NOT eat all of this, so I saved about half of that piece to flake over a salad for Monday’s lunch):

All in all, not your typical Halloween food (but what is, really?), but overall a very tasty meal!

    Ah you have no idea how glad I am that you’re back. Your posts always make me so happy and are totally inspiring with yummy goodness! Oh and you guys are freaking amazing with your pumpkin carving! Totally jealous. I tried last year and failed miserably šŸ™ also left the damn thing outside and it rotted in like two days haha (although to my credit this was my first pumpkin carving venture). Enough about that though. Glad you’re wired again! <333
